In nature, xylitol is widely diffused, though it occurs in small amounts. It can be found in some fruit, berries, mushrooms, hard wood (especially birch - hence Finns call it „the sugar of birch”) and corn cobs. In a handful of raspberries there is less than a gram of xylitol. Our organisms in their daily metabolim use xylitol, producing it in the quantity of 15 grams from various food sources.

Xylitol is slowly absorbed by the human body, achieving a caloric value 40% lower than other carbohydrates. For these reasons it has the following effect: the increase of the glucose level in blood and the organism reaction of insulin to the absorption of glucose (more than 60% of the insulin's serum less in the critical time of 30 minutes than for glucose or sugar) lessened indeed. In this way it is possible to reach the control of glucose's level in blood, lipides' level and the body weight.

Discovered in 1891 xylitol has been applied since the 60s of the XXth century. In a number of countries it is a popular with diabetics substitute for sugar. The FDA and JEFCA , the advisory organs of the WHO and FAQ affirmed that there was no limit for the intake of xylitol (ADI - an acceptable daily dose), which means, that it is entirely safe irrespective of the amount consumed daily.

More than 25 years of research confirms, that xylitol is the best substitute for  sugar for teeth. Using xylitol reduces the degree of tooth deterioration both the high risk (a considerable extent of dentition's damage) and low risk groups (the lack of caries symptoms and well-cared for teeth). The research, which met with the approval of 6 national dentist's associations revealed, that 4 to 12 grams were enough for complete and lasting tooth protection. It efficaciously replaces, thanks to the rise in PH reaction in the mouth, breath fresheners, too.

The abundant influence of xylitol is not only seen in restraining the development of the bacteria from Streptococcus mutan's species causing caries, but as well as those from Streptococcus pneumoniae bringing about an acute inflammation of the middle ear.

However the researchers from Iowa, proved, that xylitol, could be a means of protection against bacterial infection of the lungs and bronchial tubes among people having mucoviscidosis.

Xylitol is highly recommended for people wishing to slim down (without an asceting person denying himself or herself sweets) due to the fact that it supplies the organism with 40% less calories than sugar, and it is 100% as sweet as sugar; its unquestionable virtues are: decreasing the demand for insulin and germicidal properties.

Xylitol makes mineralization (absorbing minerals by the organism) easier e.g. the absorbtion of calcium by bones, so it has an aiding effect with osteoporosis.

Xylitol is a white, crystalline substance, which looks and tastes like sugar. It differs from other sweetening substances like sorbitol, fructose or glucose, which has 5 instead of 6 atoms of carbon, the result is that it gives an alkaline and not an acidic like sugar reaction (it destroys bacteria and does not cause their development).
